To overwrite the default mandatory or optional acessory templates just copy the following files into your child-theme folder directly. NOT in the woocoommerce folder:
wp-content/woocommerce-product-accessories/public/partials/mandatory-accessories.php
wp-content/woocommerce-product-accessories/public/partials/optional-accessories.php
